Some of the questions were curious, a few almost intimate for people who had never met: what I like to drink, what soundtrack I would pick for a Friday night, and others close to philosophical, far removed from anything to do with food. I answered without knowing what they were for, suspecting they would come back to me one day in another form. They did, over dinner: first as a reworked Negroni waiting for me at the bar and, hours later, as the songs each of us had chosen, slipping at random into the house playlist.

Getting there is an endurance test in itself. Bombay is a city of apparently organised chaos, where the traffic means leaving an hour early for the shortest trip and patience is the first ingredient of any dinner. In Bandra, among the lanes of Ranwar, the queue, the neon and the bright colours outside Veronica’s give away the busiest sandwich shop in town. In the bustle inside, almost no one notices the narrow staircase rising behind the coffee counter. Upstairs is another world: first a red neon sign spelling Papa’s over the old Jude’s Bakery board, then a counter and an open kitchen that have nothing to do with the noise downstairs. Hidden inside another restaurant, with no sign on the street and a back-door entrance, Papa’s could be the best-kept speakeasy in Bombay, were it not also the hardest table in town to book.

Chef Hussain Shahzad and Shivargha Chakravarti

A bakery in Ranwar

Ranwar is one of Bandra’s old villages, in a neighbourhood that was Portuguese until 1739 and still keeps its 16th-century Jesuit churches. In recent years, the country has won over the food world past its borders: Gaggan is a global phenomenon, Himanshu Saini took Trèsind Studio in Dubai to the coveted three Michelin stars, and across Europe new projects are bringing traditional Indian recipes up to the standards of haute cuisine. Today, many of the cooks who left to deepen their knowledge abroad are coming home and cooking the flavours of their country with new confidence, and Bombay is where you feel it most, with Papa’s as its boldest and most fun proof. It opened in February 2024 and, two years on, sits at No. 66 on the extended Asia’s 50 Best list, ranks as India’s third-best restaurant for Condé Nast Traveller India and was named by TIME in 2025 among the world’s greatest places. None of this helps you get a seat.

I went expecting to see and be seen, with reservations gone in seconds and celebrities doing anything for a seat at the counter.

I found a house you enter by a staircase hidden behind a coffee machine, where you are welcomed like an old friend.

Papa’s could have been one more among many: there is no shortage of fake speakeasies and counters imitating omakase. But here it all sounds different: the attention, the friendliness, the hospitality and the surprise, sparked step by step by the dishes and the exchanges. It is one of those places you leave feeling you received more than you paid for, and a bill that favours the diner is increasingly rare in fine dining or, as would make more sense here, in fine fun dining.

Would I have liked a stronger blow of heat or spice here and there, and a detail or two fixed? I would! But Papa’s does not cook for foreigners or for our assumptions about Indian food. The restaurant is made by its Bombay regulars, who are after other notes and other details. Even so, I won’t let go of one idea: that the petit fours should be Hussain‘s traditional samosas, with form and flavour where they have always been. I suspect Cardoz would agree, and so would the locals. It would be like the prego, the steak sandwich that closes a seafood feast in Lisbon or Porto.
When I came down the stairs, Veronica’s had already shut, its colourful façade dark, and the street had finally gone quiet, a rare thing in Bombay. That impossible mix of music and magic was still playing in my head. In my pocket, the slip from dessert with its simple order: never say no to dessert. I’ll add a clause of my own: nor to a seat at Papa’s counter, if your finger is quick enough at 11am local time on the 1st of each month.

A few days before I flew to Bombay, the restaurant sent me a short questionnaire.
