In \u00c9vora, with Marisa by his side, he created a <strong>kitchen that is as much his own as it is of the place where it was established.<\/strong><\/p>\n<p>The menu \u2014 or rather, the slate that replaces it \u2014 <strong>changes with the chef&#8217;s mood, the day&#8217;s inspiration, and above all, the land and its producers&#8217; generosity<\/strong>. This is where the poetry begins.<br \/>\n<\/strong><\/p>\n<p><span data-preserver-spaces=\"true\">Selecting a few: the <strong><em>torchietti<\/em><\/strong><strong>\u00a0with lamb rag\u00f9 and purslane<\/strong><\/span><span data-preserver-spaces=\"true\">\u00a0\u2014 a <strong>dish where Alentejan rusticity embraces with technical precision the density of Italian tradition<\/strong> \u2014 was hijacked by our 3-year-old daughter. Here, Francesco shows great technical mastery: the Pasta, cooked to perfection, encases a creamy filling that melts elegantly upon the first touch with the palate.<\/span><\/p>\n<figure
