Since its opening in 1906 by C\u00e9sar Ritz and Auguste Escoffier, the Ritz has hosted countless illustrious guests, including royalty, politicians, and socialites. It even served as the backdrop for several decisive meetings that shaped the course of World War II.<\/p>\n<p>Like everything with a long history and identity, the hotel has gone through various phases: from the death of C\u00e9sar Ritz to the Great Depression, from different owners and managers to the fashions of each decade. The atmosphere is sumptuous, filled with bronze and marble, sparkling chandeliers, gilded mirrors, and high-quality fabrics. It is a grand room where the tables are meticulously set, and the service is fit for royalty from the reception.<\/p><\/blockquote>\n<p>Seated, we are immediately enveloped by an atmosphere of refinement, highlighted by a touch of British tradition. Even a pianist is present to enrich the sensory experience.<\/p>\n<p>We started with a champagne trolley that arrived promptly and elegantly at the table\u2014after all, we were at the Ritz! It is an indulgent experience, as it should be!<\/p>\n<p>But the best of this phase is saved for the <strong>Beef Tartare Tartlet<\/strong> with Oscietra Caviar and a touch of cr\u00e8me fra\u00eeche. Alongside it is a no less stunning brioche and a pistachio Bakewell tart. It is a powerful duo of Scottish langoustines, perfectly cooked in butter and served over cauliflower pur\u00e9e, fennel, and baby vegetables, all tied together with a rich and complex nage.<\/p>\n<p>Ultimately, the dish met all my expectations, with a perfect balance of sweetness, richness from the sauce, and contrast from the vegetables. At the table, it is finished with a creamy Parmigiano Reggiano 36-month sauce.
