Obviously, not forgetting the cuisine of Bocuse, Troisgros, Senderens, Alain Chapel or Roger Verg\u00e9, who started a movement that played with traditions and the cuisine.<\/p>\n<p style=\"text-align: justify;\">Nomicos accompanied Ducasse in several restaurants until he handed him the kitchen of the gorgeous <em>La Grande Cascade<\/em> (<a href=\"http:\/\/www.flavorsandsenses.com\/en\/la-grande-cascade\/\">see<\/a>), where he won his first star and later in the famous <em>Lasserre<\/em> (one of the main gastronomical institutions in Paris) where he won two stars and stayed for 10 years until deciding to break some barriers and open his <em>Les Tablettes<\/em> in 2011, having conquered his only star since 2012.<\/p>\n<p style=\"text-align: justify;\"><a href=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-22831 size-large\" src=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-1024x683.jpg\" alt=\"\" width=\"1024\" height=\"683\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-1024x683.jpg 1024w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-300x200.jpg 300w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-768x512.jpg 768w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-450x300.jpg 450w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-225x150.jpg 225w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-900x600.jpg 900w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-20x13.jpg 20w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13-144x96.jpg 144w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2016\/11\/lestablettes-13.jpg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Establishing on his own, Jean-Louis Nomicos decided to abandon the classical, and almost imperial, side of<em> Lasserre&#8217;s<\/em> cuisine, to embrace his great passion and origins, the Mediterranean; On point fish, with a crunchy and delicate cape, accompanied by super fresh zebra tomatoes and green apple, and a Rome tomato cream of quite intense flavor, all connected by the great saffron sauce. A sinful macaroni, filled with truffles, celery and foie gras gratin with bechamel, and paired with an amazing sauce of meat and truffles. This dish is comfort food taken to another level, one you cannot easily forget, and that I wish to taste in truffle season. Tasty meat, and on point, with the highlight going straight to the great provencal sauce and the amazing souffl\u00e9e potatoes, that certainly leave any cook with the nerves on edge.<\/p>\n<p style=\"text-align: justify;\">On the glass was a\u00a0<em>C\u00f4tes du Rh\u00f4ne Parall\u00e8le 45 from 2014<\/em>\u00a0, the input range of the house <em>Paul Jaboulet A\u00een\u00e9<\/em>, presenting itself as an easy wine, of elegant color and a thin body, full of red fruits and some spicy notes in the end that went well with the meat and the sauce.
