Whether for its traditional cooking techniques or the use of some heavier ingredients in the composition of its dishes. The combat against this paradigm has been the challenge of the new generations of Chefs and Restauranteurs in Prague. One of those Restauranteurs is Sanjiv Suri, an Indian entrepreneur who\u2019s making a mark in the city with his restaurants.<\/p>\n<p style=\"text-align: justify;\">His masterpiece is this <em>Bellevue<\/em>, located in a former palace, with an <em>Art Nouveau<\/em> design, and an astonishing view over the Charles Bridge and the Castle of Prague that gives the name to the restaurant.<\/p>\n<p style=\"text-align: justify;\">Already inside, we were warmly welcomed and guided to one of the small rooms of the restaurant, elegantly decorated with more contemporary details, where the spotlight literally goes to the beautiful chandeliers (bad for photographs, but gorgeous), creating a good cosmopolitan environment in contrast with the view over the\u00a0classic spots of Prague.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-24446 size-large\" src=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-1024x684.jpg\" alt=\"\" width=\"1024\" height=\"684\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-1024x684.jpg 1024w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-300x201.jpg 300w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-768x513.jpg 768w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-450x301.jpg 450w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-225x150.jpg 225w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-900x602.jpg 900w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-20x13.jpg 20w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1-144x96.jpg 144w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-7-1.jpg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><span style=\"color: #999999;\"><em>Amuse bouche\u00a0<\/em><\/span><\/p>\n<p style=\"text-align: justify;\">At our table (wide and with the correct distance to\u00a0the remaining tables), we are welcomed with a toast of <em>Bollinger Special Cuv\u00e9e<\/em>, a great level champagne that accompanied the<em> Amuse Bouche<\/em>, a comforting <strong>Pumpkin cream with ricotta ravioli, pine nuts and truffle oil<\/strong>, showing the strong influence of the Italian and French flavors in the restaurant\u2019s cuisine \u2013 a good start of meal in terms of an Autumn menu, in a quite cold night.<\/p>\n<p style=\"text-align: justify;\">Followed the bread, where the highlight was the great focaccia, moist and coming right out the oven, good butter and olive oil.<\/p>\n<p style=\"text-align: justify;\"><strong><a href=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-24448 size-large\" src=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-1024x684.jpg\" alt=\"\" width=\"1024\" height=\"684\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-1024x684.jpg 1024w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-300x201.jpg 300w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-768x513.jpg 768w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-450x301.jpg 450w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-225x150.jpg 225w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-900x602.jpg 900w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-20x13.jpg 20w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1-144x96.jpg 144w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-6-1.jpg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/strong><strong>Duck <em>Foie Gras<\/em> Tureen,<\/strong> <em>smoked duck, hibiscus and citrus<\/em><\/p>\n<p style=\"text-align: justify;\">A dish with a strong French nature, both in the ingredients and the presentation, with a well prepared tureen, served at the right temperature and working well with the acidic notes of the citrus, and the texture and flavor of the smoked duck. The hibiscus sauce gave some sweetness and connected all the elements; Accompanying was a good brioche.<\/p>\n<p style=\"text-align: justify;\">To go with, the company for this <em>Foie<\/em> couldn\u2019t have been more classic, a <em>Sauternes<\/em>, <em>Ch\u00e2teau Closiot<\/em> from 2010. This was one of those exceptions, with the light Parmesan foam giving some complexity to a dish of soft flavors. Well-cooked scallops, as well as the pea puree, the <em>Romanesco<\/em> broccoli and the cauliflower that gave dimension to the dish. Very good!<\/p>\n<p style=\"text-align: justify;\">Harmonizing was, and very well, a Czech Chardonnay,\u00a0<em>Mystery 2013<\/em>, of the producer Zapletal. Excellent cooking of the meat and foie and good connection with the <em>topinambour<\/em>\u00a0puree and the <em>saut\u00e9ed<\/em> cabbage. The least positive note was the sauce, with a basis of red wine reduction and sweetbrier rose, which given the quantity and strength overlapped the remaining elements.<\/p>\n<p style=\"text-align: justify;\">In the glass a <em>Zweigeltrebe 2013<\/em> of the small producer Milan S\u00f9kal, which body and structure worked well with the dish.<\/p>\n<p style=\"text-align: justify;\">Followed a palate cleanser with a <strong>Pineapple, bergamot sorbet and litchi<\/strong> foam basis, a pre dessert with freshness and acidity that worked really nicely breaking the stronger and unctuous flavors from the last course.<\/p>\n<p style=\"text-align: justify;\"><strong><a href=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-24457 size-large\" src=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-684x1024.jpg\" alt=\"\" width=\"684\" height=\"1024\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-684x1024.jpg 684w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-200x300.jpg 200w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-768x1150.jpg 768w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-450x674.jpg 450w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-225x337.jpg 225w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-900x1348.jpg 900w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-20x30.jpg 20w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1-64x96.jpg 64w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/11\/Bellevue-2-1.jpg 1200w\" sizes=\"auto, (max-width: 684px) 100vw, 684px\" \/><\/a><\/strong><strong>Baileys Br\u00fbl\u00e9e, tropical fruits<\/strong><\/p>\n<p style=\"text-align: justify;\">To finish, a classic dessert and deceptively simple that however revealed to be one of the best <em>Br\u00fbl\u00e9es<\/em> I ever tasted, not only for the well accomplished flavor with a light addiction of baileys, but much because of its truly silky texture. Accompanying the sweet, a combination of fruits (pineapple, mango, papaya, passion fruit and pomegranate) that gave freshness to the dish. A great ending!<\/p>\n<p style=\"text-align: justify;\">The harmonization was made with yet another classic, and well accomplished, with a<em> 2011 Monbazillac<\/em>, from <em>Chateau Castel La P\u00e8ze<\/em>.<\/p>\n<p style=\"text-align: justify;\">Having made the harmonization with wines from the tasting menu we ended up not seeing the wine list, but judging by the exposed cellar in the room the list is extensive, focusing in wines of the old world, especially the locals and a wide list of French wines.<\/p>\n<p style=\"text-align: justify;\">The Service went very well, formal enough, with a well prepared team, genuinely friendly (not the usual in Prague) and with a perfect English.<\/p>\n<p style=\"text-align: justify;\"><strong>Final Remarks<\/strong><br \/>\n<em>Bellevue<\/em> is a restaurant with an international nature, pleasing not only tourists looking for a good table in Prague, but also the locals that filled the restaurant when we visited. The cuisine presents creations with a classic basis, good technical domain and excellent ingredients. Dishes full of flavor and an excellent service make this one of the best restaurants in town- this to introduce the view <em>clich\u00e9<\/em>.
