village near the <em>Natural Park of Montesinho<\/em>, known for its good gastronomy, excellent bread and, of course, the <em>B\u00edsaro<\/em>\u00a0pork.<\/p>\n<p style=\"text-align: justify;\">And it was precisely this animal with origin in the region that took us to the facilities of <em>B\u00edsaro<\/em> \u2013 <em>Salsicharia Tradicional<\/em>, a family company (from 1935) that has been, for the last few years, enhancing the breed and the so desired sausages of the region.<\/p>\n<p>\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 <a href=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/09\/Bisaro-1-1.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-24739 size-thumbnail\" to embrace the project with passion, we got to know the new facilities of the brand, a factory well incorporated with the rural area it is inserted in, besides, if it weren\u2019t for the giant billboard outside it would be impossible to identify the company from the exterior.<\/p>\n<p style=\"text-align: center;\"><a and equipment, allowing the company to monitor the entire process of the meat\u2019s transformation, from the slaughter to the packaging.<\/p>\n<p style=\"text-align: justify;\"><a make the mistake of thinking that with these facilities the interest is the massive production for supermarkets, on the contrary, these new conditions assure that all the hygiene and security measures are met, but also assure that the traditional recipes are preserved and even enhanced, as observed, for example, in their products with premium seal of the brand with basis on <em>B\u00edsaro<\/em> pigs, raised outdoors in the field and fed with chestnuts.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/09\/Bisaro-6-1.jpg\" got to know more about the production process of the sausages and smoked goods typical from <em>Tr\u00e1s-os-Montes<\/em>, from the salting of the <em>j\u00e1mons\u00a0<\/em>to the ingredients added to the pork in order to create <em>alheiras<\/em> and <em>salpic\u00f5es<\/em>, and the different curing types. A great wine from <em>Alentejo<\/em> harmonizing a beautiful <em>Tr\u00e1s-os-Montes<\/em> meal.<\/p>\n<p style=\"text-align: justify;\"><em>D.Roberto<\/em> is one of the most dignified representatives of the region\u2019s cuisine, with the highest quality raw material allied to hands that learned with the older generations, keeping the flame of a tradition that quickly and easily could be lost.<\/p>\n<p style=\"text-align: justify;\">As to <em>A.
