And if sports and cuisine have nothing in common, the truth is that it was the passion for food that made him become a cook, with travels, lots of meals, practice and lots of experiments. In 2013 he opened, in Ala\u00e7ati (a famous summer resort in the coast of the Aegean Sea), the first<em> Alancha<\/em>. To which followed a new space, already in 2015, this time in Istanbul, with a wider and more international audience.<\/p>\n<p style=\"text-align: justify;\">The concept represents the well-marked influence of Nature in Kemal\u2019s life. Marked by the <em>Nordic New Cuisine<\/em>, Kemal searches in the most pure ingredients of Anatolia, a basis to create a new culinary universe in some kind of <em>Revisited Turkish Cuisine<\/em>.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-3.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7124\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-3.jpg\" alt=\"Alancha - 3\" width=\"540\" height=\"810\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-3.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-3-200x300.jpg 200w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a>The restaurant occupies some floors of the luxurious complex <em>Armani Ma\u00e7ka Residence<\/em>, in a combination of industrial revolution vs. ecology, with a Nordic matrix, the decoration of G\u00fcrcan Dere creates an astonishing environment, modern and cosmopolitan, marked by Nature and with amazing details, like the tall wood tables, the bar or the cellar. One of the most beautiful and overwhelming restaurants I ever had the chance to visit.<\/p>\n<p style=\"text-align: justify;\">The space is dived into 3 different areas, the first room \u201c<em>beets<\/em>\u201d, with tall, wide and comfortable tables serves for lunches and the <em>\u00e0 la carte<\/em> menu, followed by the bar, where the master G\u00f6ksel G\u00fcle\u00e7 and his team create the most modern and interesting signature cocktails of the city. And on the second floor, the \u201ctasting\u201d room, exclusive for dinner where there is only the Tasting Menu with over 18 dishes inspired by the Anatolia cuisine.<\/p>\n<p style=\"text-align: justify;\">But on to the food, as even I start getting hungry while my memories come back as I\u2019m writing.<\/p>\n<p style=\"text-align: justify;\">Given the impossibility of visiting the space at dinner we opted for a selection of dishes available for the lunch menu, some of them also present on the tasting menu.<\/p>\n<p style=\"text-align: justify;\"><strong><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-4.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7125\" src=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-4-150x150.jpg\" alt=\"Alancha - 4\" width=\"150\" height=\"150\" \/><\/a> \u00a0 \u00a0 \u00a0 \u00a0 \u00a0\u00a0<a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-5.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7126\" src=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-5-150x150.jpg\" alt=\"Alancha - 5\" width=\"150\" height=\"150\" \/><\/a> \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 <a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-6.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7127\" src=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-6-150x150.jpg\" alt=\"Alancha - 6\" width=\"150\" height=\"150\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-6-150x150.jpg 150w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-6-300x300.jpg 300w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-6.jpg 540w\" sizes=\"auto, (max-width: 150px) 100vw, 150px\" \/><\/a><\/strong>Already installed, 3 appetizers arose, each one at a time, first a fresh and light <em>thyme cream<\/em>, with lemon zest and almonds, unique flavor and creaminess. Coming in second some <em>Jerusalem artichoke chips<\/em> with aioli, savory and pretty crunchy with a great <em>aioli<\/em>. To finish, <em>bo\u015fnak<\/em> with truffle cream, a traditional dried meat (maybe a bit too dry), accompanied by a delicious dark cream made with truffle.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-7.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7128\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-7.jpg\" alt=\"Alancha - 7\" width=\"540\" height=\"810\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-7.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-7-200x300.jpg 200w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a>Followed two different types of bread, sourdough and potato bread, both slightly toasted on the grill and both with exceptional quality (the Turkish bread is something that I like a lot!) accompanying a black sea butter covered with tomato powder, which revealed to be the perfect companion, moreover, I was happy with just this, but the meal went on.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-9.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7130\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-9.jpg\" alt=\"Alancha - 9\" width=\"540\" height=\"360\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-9.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-9-300x200.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Fennel<\/strong><br \/>\n\u201cFennel\u201d, was the description of one of the dishes in the menu, with basis on its main ingredient. A light and tasty cream, with pinions, orange juice reduction (keeping its freshness) and a delicious saut\u00e9ed fennel. One of those dishes that makes you think twice about the vegetarian universe.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-8.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7129\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-8.jpg\" alt=\"Alancha - 8\" width=\"540\" height=\"546\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-8.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-8-296x300.jpg 296w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Octopus,<\/strong> <em>chickpea and lemon puree, coriander sauce, orange powder and chives<\/em><br \/>\nAnother beautiful dish, both as beautiful as it was good. All the elements worked well together and individually, with highlight to the integration of the citric freshness of the orange powder and the addition of the lemon to the puree. Also the chives with some more burnt areas served very well as earth element, creating a great balance between earth and sea. Luxurious.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-10.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7131\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-10.jpg\" alt=\"Alancha - 10\" width=\"540\" height=\"480\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-10.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-10-300x266.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Fava beans,<\/strong> <em>verbena and truffle<\/em><br \/>\nFava beans cooked with a vegetable broth, onion and chives, enriched with truffle and verbena, at first sight a simple dish, very simple, but in reality if the fennel dish made us think twice, this one provided a true vegetarian \u201corgasm\u201d.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-12.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7133\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-12.jpg\" alt=\"Alancha - 12\" width=\"540\" height=\"360\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-12.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-12-300x200.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Rock Bass (a Bass type),<\/strong> <em>flowers, bergamot and tarragon<\/em><br \/>\nFish grilled on spot, crispy skin and succulent meat over a bed of edible flowers, most likely fermented. Accompanying a bergamot sauce and a light tarragon oil. A dish full of dimensions, from the textures to the flavors, completely filling the palate. Very good.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-11.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7132\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-11.jpg\" alt=\"Alancha - 11\" width=\"540\" height=\"360\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-11.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-11-300x200.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Lamb,<\/strong> <em>yogurt cream and purple carrot<\/em><br \/>\nGrilled lamb, slightly glazed. Accompanied with purple carrot and a yogurt cream. Another visually flawless dish, full of character, strength and inspiration well creased in the Turkish universe.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-14.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7135\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-14.jpg\" alt=\"Alancha - 14\" width=\"540\" height=\"360\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-14.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-14-300x200.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Mushroom Ice Cream<\/strong><br \/>\nMushroom?? Yes, yes, and it was overwhelming! Creamy texture, light flavor, reinforced by the mushroom powder and complemented by the freshness of the orange and coconut tea. Brilliant!<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-13.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7134\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-13.jpg\" alt=\"Alancha - 13\" width=\"540\" height=\"360\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-13.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-13-300x200.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Kars Gavyeri cheese,<\/strong> <em>pomegranate marmalade, semolina thin cake<\/em><br \/>\nMy tasting notes took me to something near a Swiss <em>gruyere<\/em>, but it didn&#8217;t\u00a0make sense with basis on the restaurant\u2019s concept. However and enlightened<em> \u00e0 posteriori<\/em> by Kemal, the cheese is a<em> gruyere<\/em> made in the small town of Kars, one of the cheese producer regions of the ancient Anatolia. With the cheese an interesting marmalade of pomegranate and a thin semolina cake, all of them interesting elements, working well with the cheese. However, the most surprising element goes to the airy cream that unites all the elements, made with water and sugar beaten to that texture. In this part you\u2019re asking which is the avant gard technique to reach that texture, well the technique is apparently ancestral, consisting of putting some quillaja or soapwort roots in the water, boil it and infuse it from one day to the next and then beat that water with a sugar syrup creating something similar to a meringue called <em>Natef<\/em>. In this case, the slightly spicy notes and its texture worked very well with the remaining elements as well as with the wine.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-15.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7136\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-15.jpg\" alt=\"Alancha - 15\" width=\"540\" height=\"360\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-15.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-15-300x200.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><strong>Beetroot,<\/strong> <em>caramel, yogurt mousse and corn<\/em><br \/>\nI\u2019m not a fan of very sweet desserts (with one or another exception to the Portuguese convent sweets), and this proposal form Alancha was all I could ask for a brilliant end to this meal. Dehydrated beetroots cooked in syrup, a great and fresh yogurt mousse with a crunchy touch of the tufted corn, all connected by an amazing caramel sauce. Great ending!<\/p>\n<p style=\"text-align: justify;\">We once again accompanied our meal with a national wine, <em>Pombal do Ves\u00favio 2009<\/em> that behaved up to the entire meal.<\/p>\n<p style=\"text-align: center;\"><em><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-21.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7141\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-21.jpg\" alt=\"Alancha - 21\" width=\"540\" height=\"720\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-21.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-21-225x300.jpg 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><span style=\"color: #999999;\">Pombal do Ves\u00favio\u00a0and the great cup service <\/span><\/em><\/p>\n<p style=\"text-align: justify;\">The Service lives by the same image of the restaurant, relaxed and informal but highly professional and attentive to every detail.<\/p>\n<p style=\"text-align: justify;\">I cannot help to highlight the plating, all armed with beautiful artisanal plates and an aesthetic care beyond the influences of the Nordic cuisine in Kemal. The colors, the assembly, the elements and the textures have a huge role in this new clothing the chef gives to his Turkish cuisine.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-20.jpg\" rel=\"mfp\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7140\" src=\"http:\/\/www.flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-20.jpg\" alt=\"Alancha - 20\" width=\"540\" height=\"360\" srcset=\"https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-20.jpg 540w, https:\/\/flavorsandsenses.com\/wp-content\/uploads\/2015\/04\/Alancha-20-300x200.jpg 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/a><span style=\"color: #999999;\"><em>Kitchen Lab<\/em><\/span><\/p>\n<p style=\"text-align: justify;\">We didn&#8217;t end our experience at <em>Alancha<\/em> without a guided visit to all the areas of the restaurant and a small conversation with Kemal, about his ideas and the future of this new cuisine in Istanbul. In Kemal\u2019s case, he started his adventure in Izmir, on his first <em>Alancha<\/em> (still open), with a majority of Turkish public. Nowadays, with the opening of this new space in Istanbul his cuisine presents itself to the world and to a much wider range of foodies and gastronomes, the demand, the accuracy and obligations are now much higher, but also must be the rewards. The presented cuisine is exuberant and attractive, while using ingredients as simple as fava beans or beetroots, the techniques and the general quality of the entire meal in a restaurant open for just a month (when we visited) couldn\u2019t leave a better impression.
